Ingredients:
- 500berries
- 160ml coconut cream
- 4tblsp maple syrup (the quantity will vary depending on how sweet the berries are)
- 50ml kirsch
- 250g mascarpone cheese
To serve:
- Mango or fruit coulis
- Mint to decorate
- Icing sugar
Method:
- Clean berries and cut in half. Line Place on a tray lined with greaseproof paper and put in the freezer to chill.
- Line a 2lb long and thin loaf pan with cling wrap.
- Add 300g of frozen berries and other ingredients in the glass bowl.
- Select Ice mode. Press On/Off button to start.
- When finished, add maple syrup to taste.
- Add the remaining frozen berries to the glass bowl. Mix and stir gently with the spatula.
- Pour the mixture into the pan. Put in the freezer for a minimum of half an hour or until it sets.
- Remove the Semifreddo from the pan. Cut into portions. Garnish with a sprig of mint and fruit coulis. Sprinkle icing sugar.
Tips: If the semifreddo has been freeze for too long, serve on a plate and let cool in room temperature before use.
