Kirsch Seasonal Berries Semifreddo

Serve: 6-8
Preparation time: 20 minutes Plus freezing time
Cooking time: 1 minute, plus chilling time
Program:  Ice crushing mode

Ingredients:
  • 500berries
  • 160ml coconut cream
  • 4tblsp maple syrup (the quantity will vary depending on how sweet the berries are)
  • 50ml kirsch
  • 250g mascarpone cheese
To serve:
  • Mango or fruit coulis
  • Mint to decorate
  • Icing sugar
Method:
  1. Clean berries and cut in half. Line Place on a tray lined with greaseproof paper and put in the freezer to chill.
  2. Line a 2lb long and thin loaf pan with cling wrap.
  3. Add 300g of frozen berries and other ingredients in the glass bowl.
  4. Select Ice mode. Press On/Off button to start.
  5. When finished, add maple syrup to taste.
  6. Add the remaining frozen berries to the glass bowl. Mix and stir gently with the spatula.
  7. Pour the mixture into the pan. Put in the freezer for a minimum of half an hour or until it sets.
  8. Remove the Semifreddo from the pan. Cut into portions. Garnish with a sprig of mint and fruit coulis. Sprinkle icing sugar.

Tips: If the semifreddo has been freeze for too long, serve on a plate and let cool in room temperature before use.
