Project Description
Ingredients:
- 1x Onion (diced)
- 2x Garlic Cloves (minced)
- 2x Carrots
- 1/2 Broccoli
- Handful Baby Spinach
- 3x Plum Tomatoes
- 100g Cherry Tomatoes
- 1x Leek
- 30g Parsley (chopped, plus extra for garnish)
- 1x Red Chilli (seeds removed)
- 1L Vegetable Stock
- 1tsp Ground Cumin
- 1tsp Ground Coriander
- 30g Rice (I used white rice, but you can use your favourite type)
Seasoning:
- Salt & Pepper (to taste)
Method:
- Chop all of your vegetables into chunky pieces.
- Add the vegetables, chilli and parsley into your Scott Simplissimo Chef .
- Add the rice, vegetable stock, cumin and coriander. Season with salt and pepper. Place the lid on the blender so that it is sealed.
- Select the “Chunky/Thick soup” setting on your blender and press start. Leave to cook and blend for the suggested 30 minutes.
- Serve with a parsley garnish and crack of salt & pepper.
