Sous Vide Chicken with Coffee Cocoa and Vanilla

Ingredients:
  • 3 small onions peeled and cut into 4
  • 2 chicken legs thigh and drumstick separated
  • Mixture of the following spices to your taste: fennel seeds, cracked black pepper, cumin seeds, coriander seeds
  • 4 sprigs of thyme
  • 2 garlic cloves cracked
  • 2 tsp honey
  • 1.5tsp cocoa powder
  • 45ml coffee (room temperature)
  • ½ vanilla pod split in half
  • ¼ tsp smoked paprika
  • Salt (optional)
Seasoning:
  • 2tsp Extra virgin olive oil
  • Fresh thyme
Method:
  1. Cut all tendons and skin below the ankle joint of the drumsticks.
  2. Put all ingredients into a vacuum bag. Seal properly.
  3. Add 200ml water into the glass bowl. Put the bag into the steam basket and cover with the lid.
  4. Select  Manual mode and set the temperature ar 95°C and timer for 35 minutes. Press On/Off button to start.
  5. Place on the serving plate. Drizzle with 1 teaspoon of oil and decorate with a few thyme leaves.
