Ingredients:
- 3 small onions peeled and cut into 4
- 2 chicken legs thigh and drumstick separated
- Mixture of the following spices to your taste: fennel seeds, cracked black pepper, cumin seeds, coriander seeds
- 4 sprigs of thyme
- 2 garlic cloves cracked
- 2 tsp honey
- 1.5tsp cocoa powder
- 45ml coffee (room temperature)
- ½ vanilla pod split in half
- ¼ tsp smoked paprika
- Salt (optional)
Seasoning:
- 2tsp Extra virgin olive oil
- Fresh thyme
Method:
- Cut all tendons and skin below the ankle joint of the drumsticks.
- Put all ingredients into a vacuum bag. Seal properly.
- Add 200ml water into the glass bowl. Put the bag into the steam basket and cover with the lid.
- Select Manual mode and set the temperature ar 95°C and timer for 35 minutes. Press On/Off button to start.
- Place on the serving plate. Drizzle with 1 teaspoon of oil and decorate with a few thyme leaves.
