Cauliflower and White Almond Soup

Serve: 3-4
Preparation time: 8 minutes
Cooking time: 30 minutes
Program:  Fine soup mode

Ingredients:
  • 50 g leeks (white part only)
  • 1 garlic clove
  • 350g cauliflower cut into pieces
  • 50g ground almonds
  • 400ml vegetable/chicken stock or water
  • 2 sprigs thyme
  • 1/4tsp cracked black pepper
  • 1/4tsp ground nutmeg
  • 1-2 tsp honey
  • Salt (optional)
To serve:
  • 4tsp Extra virgin olive oil
  • 20g toasted flaked almonds
  • Smoked paprika
  • Chives (finely chopped)
Method:
  1. Place all the ingredients into the glass bowl and cover with the lid
  2. Select “Fine soup” Mode. Press On/Off button to start.
  3. When finishes, add seasoning to taste.
  4. Serve the soup. Decorated with flaked almonds, a drizzle of olive oil, a handful of chives and a sprinkle of smoked paprika.
